Hénin-Delouvin Champagne are the fruits of the marriage of two Houses, F.Hénin Père et Fils from Aÿ and Delouvin-Chayoux from the village of Cerseuil. Jacky Henin creates his cuvees step by step in his winery in the centre of Ay. Everything is done in house from picking the grapes by hand to pressing them, from bottle fermentation to disgorgement right through to the final shipping, the wines are vinified and matured with great rigour and the respect that has been passed down through three generations. Culture raisonée is practiced in the mostly 100% Grand Cru vineyards that cover 5 communes, principally Aÿ and Chouilly but also Mareuil sur Aÿ , Dizy, Grauves and Cerseuil.
The fact that the vineyards are spread over such a large area gives them a varied pallette to work with when the time comes to blend each of the cuvées. The Millesimes we have, 2011 and, shortly to be released, the 2012, are 50% Pinot Noir from Aÿ and 50% Chardonnay from Chouilly on the Cote des Blancs represent a true blend of the two terroirs with wonderful and surprising complexity.
